Not just any BBQ Chicken and Chenin Blanc pairing

With a day like today, creeping into the mid 70′s, BBQ’d chicken came to mind. So here’s a wine and food pairing for just that. Open a bottle of chilled, crisp white wine like a 2011 Indaba Chenin Blanc and turn up the grill. Turn up the volume on everyday Chicken Breasts by making your own homemade Bourbon Whiskey BBQ Sauce. (You won’t go back to the grocery store bottled stuff). Don’t whine…it takes 15 minutes to make…and your house smells like a Louisiana BBQ house by now. Do I have your attention? Time to GRILL. Serve with and Iceberg Wedge Salad and sautéed Haricot Verts (French green beans). I love how the tangy, smoky sweetness of the BBQ’d chicken with that glorious sauce plays with the luscious tropical fruit packed with citrus, honey and melon flavors.

Prosciutto Mozzarella Pinwheels paired with 2008 Parrish Family Vineyards “P.O. Box 1″ GSM

Prosciutto Mozzarella Pinwheels

Pair with 2008 Parrish Family Vineyards “P.O. Box 1″ GSM -65% Grenache, 19% Mourvedre and 16% Syrah Raspberry, plum and cherry coat the front and middle palate with a wonderful satin finish of clove and soft rounded tannins.

RECIPE:

Flour, for dusting
1 pound pre-made pizza dough
2 cups shredded mozzarella cheese
7 ounces prosciutto, thinly sliced
1 cup coarsely chopped baby spinach (about 1 1/2 ounces)
1 tablespoon olive oil
Kosher salt and freshly ground black pepper

Preheat oven to 425?F and position a rack in the lower third of the oven. Line a baking sheet with parchment paper.

On a lightly floured work surface, roll out the pizza dough into a 12- to 14-inch circle, about 1/4 thick. Sprinkle half of the mozzarella over the dough. Arrange the prosciutto over the cheese in a single layer. Sprinkle with the chopped spinach, then top with the remaining cheese.

Roll the dough into the thin cylinder, gently tucking in the ends. Brush the entire roll with the olive oil and season with the salt and pepper. Place the dough, seam side down, on the baking sheet and bake for 25 minutes, or until the top is golden brown.

Cool the roll for 3 or 4 minutes, then use a serrated knife to cut it into 3/4-inch wide slices.

Middle of the Night Merlot

2009 Borra Vineyards 2:30 a.m. Merlot – At 2:30 in the morning Steve Borra gets up and hops on his tractor to protect his highest quality Merlot against frost and mildew.  Steve Borra is a time-honored, traditional Italian winegrape grower using modern day advances to nuture his vines.  This full bodied Merlot is up front, big and jammy black currants, with black rose petals, giving way to a scoop of cloves and shades of oak.  The tannins are dusty leading to a long finish of cedar-spiced pepperoni to pleasantly tart boysenberries over time.  An excellent match with wood fired pizza.
