2006 Lancaster Estate Cabernet Sauvignon
Estate grown, produced and bottled, the 2006 Lancaster Cabernet has lush ripeness with plums, rich black cherry and cassis characters and sweet, spicy aromas of clove, nutmeg, and vanilla. Finely textured tannins and layers of complexity extend over the long finish. Aged 22 months in French oak barrels, this wine was bottled unfiltered. Pairing: Enjoy with Grilled Rib Eye Steak, Pasta Bolognese or Sicilian Pizza. Cheese Pairing: Manchego, Dry Jack

2008 Dutton Goldfield Sanchietti Vineyard Pinot Noir
The warm, dry harvest season gave the Sanchietti fruit thick skins and a tiny juice yield. The resulting wine is unusually extracted for this vineyard, but the tannins are still silky and the fresh blueberry fruit is still at the core. In the nose, the wine is blueberries and black cherry compote, along with coriander and toffee overtones. In the mouth, the thickness of the 2008 vintage is immediately apparent, supporting a sweet core of blackberry and blueberry fruit and carried by wonderfully fine but substantial tannin core. This is a beautifully generous wine for current drinking, whose balance will also carry it for many years to come. Pairing: Enjoy with a Barbequed Salmon, Roasted Quail, or any dish with mushrooms. 2007 Dutton Goldfield Cherry Ridge Vineyard Syrah This vintage brings out the bright raspberry fruit, white pepper and silky tannins that are so integral to the character of this wine. In the glass, the saturated ruby color announces its density and freshness. In the nose, raspberry, white pepper and cinnamon invite the first sip, where the high toned fruit, balanced acidity and alcohol, and fine, silky tannins are immediately apparent. As the wine opens up in the glass, deeper cherry tones emerge, along with a creaminess unusual in the varietal. The finish is all lush fruit and spice, with no hint of heat. The finesse of this wine makes it great for a wide range of food pairing—try it with roasted meats, almost anything savory in a slow cooker (don’t forget some wine in the sauce), and medium strong cheeses like aged Gouda and Gruyere.

2007 Buehler Vineyards Napa Valley Cabernet Sauvignon
The wine is brimming with fruit aromas and flavors biased to the black fruit end of the cabernet spectrum: plums, blackberry, black currant. Rich and full-bodied on the palate, this cabernet drinks well on release but will soften and develop with additional age.
